Easy Vegan Alfredo Pasta

A quick and easy, creamy pasta dish.

Ingredients
  • 1 package pasta of your choosing
  • 1 cup raw cashews
  • 1 cup water
  • ¼ cup nutritional yeast
  • 2-3 garlic cloves
  • 1 tsp salt
  • ½ tsp white or black pepper
  • 3 cups chopped veggies (I used red bell pepper, broccoli, zucchini and tomatoes)
Instructions
  1. Soak the cashews in water for 1 hour or more
  2. Cook pasta according to package directions
  3. Toss the veggies in the pot during the last 2-3 minutes
  4. When pasta is done drain and set aside.
  5. Drain the cashews and add to your blender
  6. Add the 1 cup water and remaining ingredients
  7. Blend until smooth and creamy
  8. Add more water if needed
  9. Add sauce to your pot and heat
  10. Return the pasta and veggies to pot and stir to coat.
  11. Serve topped with fresh ground pepper and sprinkles of nutritional yeast.
