This salad can be used as you would salsa or as a side dish it by it self.

Ingredients
  • 1 small or ½ medium red onion, thinly sliced
  • 1 tsp salt
  • 4 roma or plum tomatoes diced
  • 1 small or ½ large cucumber cubed
  • 1 hot pepper chopped fine
  • 2 garlic cloves, minced
  • 1 lemon, juiced
  • ½ cup fresh cilantro/coriander, chopped
Instructions
  1. Place the onions in a small bowl and massage the salt into them.
  2. Cover the salted onions with water and let stand for 10 min. This will help lesson the strength of the onions.
  3. Combine the tomatoes, cucumber, hot pepper and garlic in a medium bowl.
  4. Drain the onions and add them to the vegetables and mix.
  5. Add the lemon juice and cilantro.
  6. Mix well and taste the salad.
  7. Adjust the seasoning if needed.
