Ingredients
  • 6-8 potatoes
  • 1 onion
  • 1 green pepper
  • 3-4 cloves of garlic
  • ½ bunch of fresh collard greens or kale or a mixture of your favorite greens
  • water
  • salt
  • ¼ cup fresh or 1 tsp dried herbs
  • ⅛ tsp red pepper flakes or chopped hot pepper (optional)
  • fresh ground black pepper
  • juice of 1 lemon
  • paprika
  • Avocado slices or cashew cream (optional)
Instructions
  1. Slice the potatoes
  2. Place in a pot of water and boil until tender
  3. Meanwhile chop the onions, peppers, and garlic and add to a skillet
  4. Add a few tablespoons of water and cook over medium high heat stirring frequently
  5. Stack the greens and roll into a tube.
  6. Slice the greens in thin slices
  7. Once onion have softened add the greens to the skillet and stir to mix
  8. Add herbs and red pepper flakes
  9. Add salt to taste
  10. Stir to mix
  11. Drain the the cooked potatoes and add them to the skillet
  12. Mix well
  13. Add lemon juice and fresh ground black pepper.
  14. Mix again
  15. Garnish with paprika
