Raw Vegan Mexican Avocado Tomato Soup

A delicious Mexican twist on a Gazpacho soup.

Ingredients
Soup Base
  • 2 cloves of garlic
  • ½ cucumber peeled and rough chopped
  • 2 cups cherry or grape tomatoes or chopped tomatoes
  • ½ cup corn cut off the cob
  • 2 TBL lime juice
  • 1 tsp ground cumin
  • ½ tsp salt
  • ¼-1/2 tsp red pepper flakes
  • 2 TBL olive oil (optional, omit for oil free version)
Toppings
  • 1 avocado chopped
  • ½ cucumber peeled and cubed
  • ½ cup corn cut off the cob
  • 14 cup chopped red bell pepper
  • ¼ cup chopped cilantro
  • 1 tsp minced jalapeño pepper (optional)
  • 2 TBL lemon juice
  • ¼ tsp salt
Instructions
  1. Place the topping ingredients in a bowl and mix well. Set aside to marinate while you prepare the base.
  2. Put all the base ingredients in your blender and blend until smooth.
  3. Pour base into 4 serving bowls
  4. Add ¼ of topping mixture to each bowl
