Raw Vegan Mexican Avocado Tomato Soup

- 2 cloves of garlic
- ½ cucumber peeled and rough chopped
- 2 cups cherry or grape tomatoes or chopped tomatoes
- ½ cup corn cut off the cob
- 2 TBL lime juice
- 1 tsp ground cumin
- ½ tsp salt
- ¼-1/2 tsp red pepper flakes
- 2 TBL olive oil (optional, omit for oil free version)
- 1 avocado chopped
- ½ cucumber peeled and cubed
- ½ cup corn cut off the cob
- 14 cup chopped red bell pepper
- ¼ cup chopped cilantro
- 1 tsp minced jalapeño pepper (optional)
- 2 TBL lemon juice
- ¼ tsp salt
- Place the topping ingredients in a bowl and mix well. Set aside to marinate while you prepare the base.
- Put all the base ingredients in your blender and blend until smooth.
- Pour base into 4 serving bowls
- Add ¼ of topping mixture to each bowl
