A tasty twist on the usual coleslaw recipe

Ingredients
  • ½ head cabbage shredded
  • 1 large carrot shredded (about 1 cup)
  • ½ large red bell pepper chopped
  • ¼ cup chopped chives
  • 1 cup chopped kale or collard greens
  • ½ cup fresh squeezed lemon juice
  • 4 pitted and soaked dates plus ¼ cup of soaking liquid
  • 2-3 large garlic cloves
  • 1 tsp bottled dejon or brown mustard
  • ½ tsp pink Himalayan salt
Instructions
  1. Place the chopped and shredded veggies in a large bowl
  2. Place the rest of the ingredients in your blender
  3. Blend until smooth
  4. Pour over veggies
  5. Stir to mix well
  6. Let the slaw marinate in the fridge for at least 30 minutes before serving.
