A warming, healing soup to take at the first sign of cold or flu

Ingredients
  • 1 inch piece of ginger
  • 3 garlic cloves
  • 3-4 scallions with root end
  • 1 tsp miso paste
  • 2 tsp ground withe pepper
  • ½ tsp toasted sesame oil
  • 1 tsp rice vinegar
  • 2 TBL soy sauce
  • 2 tsp dulse flakes or other seaweed
  • 3-4 cups water
  • 1 cup cooked rice OR 6-8 oz uncooked rice noodles
  • 2-3 cups chopped veggies of your choice (for example: mushrooms, snow peas, green beans, carrots, bok choy, broccoli, kale, bell pepper, zucchini)
Instructions
  1. Add water to pot
  2. Chop garlic, ginger and scallions and add to pot
  3. Bring to a slow boil
  4. Add the miso paste, pepper, sesame oil, vinegar, sea weed and soy sauce
  5. Add the rice or noodles.
  6. When they are almost done add the veggies (you can add harder veggies earlier if they need more cook time)
  7. Simmer until veggies are tender crips
  8. Serve immediately
