Dr. Tseng Magic Healing Soup

Serves: 4 servings
- 1 inch piece of ginger
- 3 garlic cloves
- 3-4 scallions with root end
- 1 tsp miso paste
- 2 tsp ground withe pepper
- ½ tsp toasted sesame oil
- 1 tsp rice vinegar
- 2 TBL soy sauce
- 2 tsp dulse flakes or other seaweed
- 3-4 cups water
- 1 cup cooked rice OR 6-8 oz uncooked rice noodles
- 2-3 cups chopped veggies of your choice (for example: mushrooms, snow peas, green beans, carrots, bok choy, broccoli, kale, bell pepper, zucchini)
- Add water to pot
- Chop garlic, ginger and scallions and add to pot
- Bring to a slow boil
- Add the miso paste, pepper, sesame oil, vinegar, sea weed and soy sauce
- Add the rice or noodles.
- When they are almost done add the veggies (you can add harder veggies earlier if they need more cook time)
- Simmer until veggies are tender crips
- Serve immediately
