Marinated Veggies

Serves: 4 servings
- 2 cups chopped firm veggies. Use all one type or a variety
- 2-4 garlic cloves
- 1-2 TBL olive oil or tahini
- 1 TBL soy sauce, tamari, or coconut aminos
- 1 TBL vinegar of your choice or citrus juice
- 1 tsp mirin
- ½ tsp toasted sesame oil
- chili flakes or powder to taste
- 1 tsp Italian seasoning
- Cut veggies into bite sized pieces
- Mince garlic
- Add the above to a bowl, or zipper bag
- Mix the remaining ingredients to make a vinaigrette dressing
- Pour dressing over the veggies.
- Mix well
- Place in fridge for 30 minutes or longer.
- Stir from time to time. (of flip over the zipper bag)
- Serve!
