Raw Vegan Taco "Meat"

Use this taco flavored pate in burritos, tacos, to fill veggies or as a dip.

Ingredients
  • 1½ cups pecans soaked for 2-4 hours then drained
  • ½ cup sun-dried tomatoes soaked for 15 min or up to 1 hour then drained
  • ½ white onion rough chopped
  • 2 cloves garlic
  • juice of 1 lime
  • ¼ cup chili powder
  • ½ tsp salt
Instructions
  1. Place all ingredients in food processor and process until well mixed.
  2. Taste and adjust seasoning.
  3. Use lettuce leaves or collard greens as a burrito wrap.
  4. Add other burrito or taco fillings as desired.
  5. Skip soaking the nuts if needed. Just add a bit of water as needed to get right consistency.
