Kale and Jerk Tempeh Wrap

Serves: 4-5 Wraps
- 1 recipe spicy kale
- 2 TBL olive oil
- 1 package three grain tempeh
- 2 roma tomatos chopped
- ½ green bell pepper chopped
- 1 small red onion chopped
- 2 garlic cloves minced
- 1-2 tsp jerk seasoning
- 1 tsp salt
- ½ cup water
- Large tortillas or wraps
- Make kale salad according to recipe
- Cut tempeh into cubes
- Heat oil in skillet
- Add onion, garlic, bell pepper
- Sauté until onions soften
- Add jerk seasoning and salt and stir to mix well
- Add tempeh, tomatoes and water
- Simmer, covered for 15-20 minutes stirring frequently
- Add more water if needed to keep tempeh from drying out
- Lay 1 wrap on large plate or other flat surface
- Layer ½ cup of jerk tempeh on wrap
- Place about 1 cup of kale salad on wrap
- Fold in the ends and then roll tightly
- Cut in half or quarters
