Indian Spiced Mushroom and Kale Salad

Serves: 4 servings
- 1 bunch curly kale
- 1½ to 2 cups sliced white or baby bella mushrooms
- ½ to 1 green chili, chopped
- ¼ cup chopped cilantro
- 3 cloves garlic, minced
- 2-3 tomatoes, chopped
- Juice of 1 lemon
- 1 TBL coconut aminos or soy sauce
- 1 TBL Mirin
- 1 TBL cold pressed sesame oil
- ½ tsp Garam Masala
- ½ tsp ground coriander
- ½ tsp ground fenugreek
- ¼ tsp salt
- Wash kale and tear or chop into bite sized pieces.
- Add kale, mushrooms and tomatoes to large bowl.
- Add chili and garlic.
- Add remaining ingredients and mix well.
- Cover and marinate for 30-60 min, stirring occasionally
