Mukimo - Kenyan Mashed Potatoes And Greens

A Kenyan dish that works well with curried veggies.

Ingredients
  • 9 potatoes
  • 2-3 cups chopped spinach, swiss chard or pumpkin leaves
  • 1 cup corn or peas
  • 3 garlic cloves
  • salt and pepper to taste
Instructions
  1. Peel potatoes if you desire (I left the skins on mime)
  2. Cut potatoes into quarters
  3. Put in a large pot and cover with water
  4. Bring to a boil
  5. Add the garlic and greens to the pot
  6. Alternatively cook the greens and garlic separately in water, then put them in the blender along with some of the cooking water.
  7. In a separate pot cook the peas/corn until they are done.
  8. Cook until potatoes are soft
  9. Drain, reserving some of the water
  10. Mash until potatoes are smooth and lumps are gone
  11. Add the blended greens if you cooked them separately.
  12. Add reserved water as needed
  13. Mix in the peas/corn
  14. Add salt and pepper to taste
  15. Serve with curried veggies or other flavorful side dish
