Vegetable Gumbo

Serves: 4 servings
- 2 cups chopped okra
- 2 cups chopped tomato
- 2 small zucchini chopped
- 1 large green pepper chopped
- 1 large onion chopped
- 3 garlic cloves minced
- 1-2 hot peppers finely chopped
- 2-6 TBL water
- 1 tsp salt
- 1 tsp thyme
- 1 tsp file´ powder (optional)
- 2 tsp mixed herbs or Italian seasoning
- 2 tsp smoked paprika
- Add onions and garlic to a heavy bottom pan
- Add 2 TBL water
- Salute over medium high heat until the onion softens
- Add remaining ingredients and mix well
- Continue simmering until tomatoes are saucy and okra is tender
- Add more water as needed to keep from burning or sticking
- That's it!
- Try adding beans, corn or other veggies as your imagination leads you
