A quick and easy lunch item using leftover pasta. Great for lunch boxes.

Ingredients
  • 2-3 cups chilled cooked pasta
  • 1-2 carrots grated
  • 1 small onion diced or 3 scallions sliced
  • 2 cloves garlic minced
  • 2 Roma tomatoes chopped or 1 cup cherry tomatoes halved
  • 2 cups spinach or kale cut thin
  • ½ cup sliced mushrooms, either fresh or dried and rehydrated
  • ½ cup chopped cilantro
  • 1 TBL sesame seeds
  • 1-2 TBL soy sauce or coconut aminoes
  • 1-2 tsp toasted sesame oil
  • 2 tsp brown rice vinegar
  • crushed red pepper or cayenne pepper to taste
Instructions
  1. Place noodles in a large bowl
  2. Add onions, garlic and carrots
  3. Add soy sauce, oil and vinegar and toss to coat noodles
  4. Add tomatoes, spinach and mushrooms and toss again
  5. Add sesame seeds, cilantro and pepper
  6. Toss and taste and adjust seasonings to your liking
