Last week I ended up with a lot of broccoli so I went in search of new recipes. Here is what I ended up creating after reviewing several recipes for broccoli slaw.
Ingredients:
- 3 heads of broccoli with stems
- 1/2 red onion chopped fine
- 1 carrot grated
- 1/2 cup sunflower seeds
- 1/4 cup dried cranberries
- 1/4 cup lemon juice
- 1/4 cup stone ground mustard
- 1 TBL Italian seasoning
- 2 TBL Mirin
- 2 garlic cloves minced
- 1/4 cup olive oil
- salt and pepper to taste
Remove the stems from the broccoli tops. Peel off any hard or dry areas on the stems. Shred the stems with the shredding blade in your food processor or by hand. Place in large bowl.
Cut the broccoli tops into very small pieces. Add to the bowl.
Add the onions, carrots, sunflower seeds, and cranberries. Mix well.
Combine the remaining ingredients in a small bowl and whisk or mix well.
Pour over the vegetables and toss to mix. Let slaw marinate for 15-30 minutes or serve immediately.

This looks like a great summer salad. Just wondering is there a substitute for Mirin?
Use the sweetener of your choice. Mirin is not hard to find. Look for Eden brand mirin in the Asian section of your health food store or where the vinegars and such are at Dekalb Farmers market.
