The holiday season is typically filled with dinner tables heaped with food. But for vegans and raw foodists, finding anything on those tables to eat can be a challenge. Here are 12 recipes that are holiday worthy for either all vegan feasts or to supplement the more “traditional” holiday fare. These dishes will please both vegans and meat eaters alike.
Salads
Harvest Kale Salad
Combines Kale and Arugula with Apples or Pears in an Italian vinaigrette dressing. There are many ways to switch this one up by varying the greens or fruit used or the herbs in the dressing. Always a crowd pleaser.
Southern Style Spicy Kale Salad
A spicy, and slightly creamy kale recipe with sun-dried tomatoes and red onion. Make it even creamier by mashing the avocado into the dressing. This one is requested by my family.
Rainbow Collard Greens
Did you know raw collards taste great? This salad is the tastiest after it has marinated for a bit so make it ahead of time and help ease the last minute rush. Use as many colorful veggies as you have available.
Main Dishes
Wild Rice With Blueberries, Mango and Mint
Even on a raw diet you can enjoy rice. By soaking wild rice overnight it becomes soft and puffs up. This easy and quick dish is very flavorful and festive looking. Serve over a bed of greens or lettuce.
Spinach Alfredo
A pleaser even for those who aren’t vegan. I was thrilled to hear some family members say they would be happy to eat like this if I was there to cook all the time. It is not difficult but it does take a bit of time. The results are worth it.
North African Lentil, Kale and Winter Squash Stew
This stew is spicy and warming. It is filling and satisfying.You can easily heat it up more by adding more or hotter chilies or leaving the seeds in. I used butternut squash but you can certainly use other winter squashes.
Sides
Marinated Vegetables
This recipe dates way back to my childhood, long before I knew anything about “raw foods” or even vegetarianism. My mom would marinate broccoli in italian dressing. My version uses fresh ingredients and can be given a Asian flair, a Mexican flavor, cajun, whatever your pleasure is.
Stuffed Mushrooms
Stuffed mushrooms are both a side dish and an appetizer. Button mushrooms, baby bella mushrooms or shiitake mushrooms are stuffed with a nut or seed pate. You can dehydrate them or serve them as is.
Curried Couscous Salad
This recipe can be a side or even a main dish. It is quick and easy and festive looking. This is another recipe that can be made ahead of time to ease the last minute crunch.
Desserts
Raw Brownies
This is a super easy recipe that you can make and be ready to eat in 15 minutes. Make a double batch! You wont’ be sorry. They are rich and sugar free. Dates are used for sweetening.
Pecan Pie
A rich and satisfying version of a family favorite for many folks. Take this to your next holiday dinner and you won’t feel deprived. But be prepared to share!
Cranberry Apple Pie
This is a holiday worthy recipe. I started with the Apple Pie recipe from Raw Food Made Easy for 1 or 2 People by Jennifer Cornbleet and then added my own Ama twist!
