Avocados are filling and delicious and make a great container to stuff with pates and other fillings. This version uses tasty summer tomatoes to create a bruschetta like filling for a lighter and refreshing side dish. The avocados we had in Tanzania were HUGE and could easily make a meal.
Ingredients
- 2 avocados
- 2 tomatoes
- ½ white onion
- ½ cup chopped basil
- ¼ cup lemon juice
- 1 garlic clove minced
- salt and pepper to taste
- 1-2 TBL olive oil (optional)
Chop tomatoes and place in medium mixing bowl. Add onions basil and garlic and mix well. Add lemon juice and mix.
Cut avocados in half and remove pit. Carefully scoop avocado out of shell with a large spoon. Try to keep the half all in one piece. Place half on a plate, cut side up.
Fill each half with tomato mixture. Sprinkle with salt and pepper and drizzle with olive oil if desired.
