This pie was a hit at a recent gathering. There were several requests for the recipe so here it is. Thanks Chris for sharing.
Crust Ingredients:
- 2 – 3 cups of almonds
- 5 Dates 5 soaked in water for 30 minutes
- Some of the water from dates
- 2 TBL of cacao powder
- Pinch of salt
Place almonds, dates, cacao and salt in food processor and process crust until it sticks together. Add some of the date water if more moisture is needed.
Press crust firmly into the bottom and sides of a 11×7 baking pan. Reserve 1/4 to 1/2 cup crust for top.
Filling Ingredients:
- 3 cups of blueberries
- 6 – 7 dates soaked in water for 30 minutes
- 2 TBL of coconut oil
- 1 banana
- 1 lemon or 1/2 orange
Layer bananas on top of crust. Squeeze lemon/orange juice over bananas
Puree´ blueberries and dates in the food processor. Add the coconut oil and mix.
Spread filling evenly over crust. Sprinkle remaining crust on top.
Refrigerate for 30 minutes before serving.
