I owe this 50 Shades Of Vegan Kale Challenge recipe to my aunt Marci who served it at a holiday family gathering. It was very tasty. It can easily be made oil free.
Ingredients
- 1-2 bunches of lacinato kale (also known as dinosaur kale) or the kale of your choice.
- 1 yellow onion chopped
- 2 cloves of garlic chopped
- 1 TBL olive oil (optional)
- 1 red or yellow pepper chopped
- ½ cup dried cranberries
- 1 cup veggie broth
- Salt and pepper to taste
Chop the kale into bite sized pieces.
In a large wok or deep frying pan, sauté the onions and garlic in the olive oil. For an oil free version skip this step.
Add the peppers and cranberries to the pan along with the onions and garlic. Pour veggie broth in and bring to a simmer.
Add the kale to the pan and sauté, stirring frequently until the kale has softened and cooked down. Add salt and pepper to taste.
