Earlier this week I mentioned this recipe in my review of the book Raw Energy. Here is my adaption of the recipe. It is very tasty and could easily be served to guests. While this is in a raw food recipe book, given what I talked about in my post about raw nuts I don’t suppose it really qualifies. Maybe we can call it raw-ish.
Curried Onion Dip

Fast and easy dip that is tasty enough to serve to your guests.

Serves: 4 Servings
Ingredients
- 1 cup cashews
- 1 medium onion roughly chopped
- 3 TBL lemon juice
- 2 TBL olive oil
- 1 TBL flax oil
- 2 tsp curry powder
- ¼ tsp salt
- ½ tsp fresh ground pepper
Instructions
- Place all ingredients in you food processor and process until very smooth. This may take several minutes. Scrape sides as needed.
- Serve with veggies, or your favorite healthy chips or bread.
- Store covered in the refrigerator for up to 5 days.
