Soup is a warming comfort food especially during the cold months. There is something especially soothing and healing about soup. These four recipes are on regular rotation in my kitchen. They are easy and flavor full and packed with healthy ingredients.
I have to admit I haven’t done a lot of creating new recipes of late. Now that I’m just cooking for myself I tend to keep things very simple. Plus, I have someone who comes in and cooks twice a week and I end up eating leftovers from her meals afterwards. But! Soups are something I do often make when I cook. These ones are my favorites. The cabbage soup is a great way to warm up on a frigid morning.
These recipes are all very adaptable. If you find that you don’t have or can’t get a particular ingredient, please feel free to omit it or substitute something else. For example if miso isn’t available to you, know that it adds a salty flavor. So adding a bit more salt or soy sauce if needed can still make for a tasty soup. If you don’t have bullion cubes (like I often don’t), just use water. You can always add extra seasonings if needed. No fresh herbs? Use dried. It’s all good.
Feel free to substitute the veggies you have on hand or that you prefer. Remember YOU are the BOSS in YOUR kitchen. Always look at recipes as a starting point and make them your own. Turn your kitchen into an experimentation station!
