Tofu is probably one of the most well know meat substitutes. There are different textures (firmness) of tofu and different types of soybeans that are used in making the tofu.
Tofu doesn’t have a lot of flavor on its own. This is one of its good features because it can take on the flavor of the dish you are creating. To make the most of this feature tofu needs to be pressed.
Pressing tofu removes some of the water in it so that it can better absorb the flavor of your sauces and seasoning. It also keeps your dish from getting watery as the tofu cooks.
Pressing tofu is very easy. You can buy a tofu press, or you can just use what’s in your kitchen already. Drain the tofu and remove it from the package. Place the tofu on a plate or flat dish with low sides. Place another plate upside down on top of the tofu. Place a jar or bottle filled with water on top of that. Keep an eye on your tofu tower because at it is pressed the tower can tip. Adjust it as needed to keep the jar centered on your tofu.
After 15-30 minutes, disassemble your tower and drain the liquid off. Your tofu is now ready to use in your recipe and soak up your special sauce.

I enjoy eating TOFU especially after I learn how to marinate and season it. I use it in for Tofu Scramble ,in my Smoothies (Fruit & Veggie), in Chowders , Soups , Stir Fry and Casseroles .
