This week in my Black Vegan Academy Facebook group I share how I make my beans taste yummy even without meat. I use a method similar to what is called tempering in Indian cooking. I discovered that folks here in Tanzania use this method when making their beans. In this video you’ll see me making my beans.
I start by soaking my dried beans overnight to soften them. Then I drain and rinse them and begin cooking them in water. Depending on the type of bean and how long they take to soften is let them simmer for an hour or two until they are nearly ready.
Once they are about ¾ of the way done I add my chosen spices in a small pan and toast them a little. Then I add onions, garlic, peppers etc. and sauté them until they are softened. I don’t use oil. I add a bit of water as needed. Then I add these to the beans and let them continue cooking until they are soft and ready to eat. I add salt towards the end of the cooking time.
