I found organic figs this week and wondered what to do with them. Here is my twist on a salad recipe I found on-line. Super fast and easy. AND delicious! Use soft, ripe figs.

Ingredients
- 1 bunch green kale washed and de-stemed and torn into bite sized pieces
- 6-8 figs, stems removed and cut into quarters or smaller
- 1/4 cup pine nuts
- 3 TBL olive oil
- 2 TBL balsamic vinegar
- 1 TBL mirin
- 1 TBL dulse flakes
- salt and pepper to taste (start with 1/2 tsp.)
Combine all ingredients in a large bowl and toss to mix well. Let marinate for 30 minutes before serving to soften or eat right away.
