A different way to eat your kale salad. You can substitute your favorite kale salad. Add other fillings like shredded beets or carrots, a seed or nut cheese, or some eggplant bacon.
Ingredients:
- Large organic whole grain tortillas or wraps
- 1 bunch kale
- 1/2 red onion sliced thin
- 1 avocado chopped
- 1/2 red bell pepper chopped
- 1 tomato chopped
- 2 cloves garlic minced
- 1 lemon juiced
- 3 TBL olive oil
- 1 TBL Mirin
- 3 TBL Nama Shoyu
- 2 TBL Italian Seasoning
- 1 tsp Chipotle Pepper Powder
Mix the salad ingredients in a large bowl. You can massage the greens with your hands to soften them or let the salad marinate for 10 minutes if you want a softer texture.
Lay the tortilla or wrap on a clean dry cutting board. If you are using a seed or nut cheese, spread it on the middle third of the wrap. Top with salad and any other fillings you are going to use. Remember that you will be compressing as you roll so add enough to make a nice fat roll.
If you have a very large wrap you can fold the ends in before you begin the roll. Then starting at the end closest too you fold the wrap up and over filling. Compress with your hands gently as you continue to roll until top edge is under the wrap. Cut wrap in half and serve!

Unfortunately I can’t. Brands vary by region and I never settled on one that I look for. Look at ingredients carefully and chose one without lard or preservatives. I find the restaurant chain brands are to be avoided. Those in health food stores tend to be better. I like those coconut wraps too!
