On a recent trip to Key West I couldn’t find vegan Key Lime Pie anywhere so I brought some key limes home with me. Key limes are very small and you will need as many as a dozen or more. You can use regular limes as well. Do squeeze your own. Don’t use bottled juice!
Please don’t let the avocado scare you. It adds the creamy texture, the green color, but doesn’t add avocado flavor.
Ingredients:
Crust:
- 1 cup raw, unsalted walnuts
- 1/2 cup coconut flakes
- 4-5 dates
- Pinch of salt
Filling:
- 2 avocado
- 1/2 cup key lime juice (or regular lime juice)
- 6 Tbsp agave nectar
- 6 Tbsp melted coconut oil
- Pinch of salt
Instructions:
For Crust:
Grind nuts and salt in a food processor until rough chopped. Add the dates and process until the dough sticks together well, don’t over process. Press crust into a pie pan or tart pan.
For Filling:
Blend well all ingredients in a blender untill smooth and creamy. Taste and adjust sweetness to your liking if needed.
Spread filling evenly over the crust. Garnish with shredded coconut or lime slices if you want to get fancy. Let it chill in the fridge for several hours, until firm.
Filling may by used to make popsicles, ice cream or eat as a pudding as well.
