This is holiday worthy recipe. I started with the Apple Pie recipe from Raw Food Made Easy for 1 or 2 People by Jennifer Cornbleet and then added my own Ama twist!
Ingredients:
Crust
- 2 cups ground almonds
- ¾ cup medjool dates
- ¼ teaspoon of salt
Place ingredients in food processor and process until mixture begins to stick together. Press firmly into the bottom and sides of 9-inch pie pan.
Filling
- 2 large apples peeled and thinly slices
- 1 apple peeled and cut into chunks
- 1 teaspoon cinnamon
- 1/2 tablespoon allspice
- 4 TBL lemon
- 1 cup pitted medjool dates, soaked for 1 hour
- 1/2 cup fresh cranberries
- 1 teaspoon vanilla extract
Toss sliced apples with half of the lemon juice and half of the cinnamon. Arrange apples in the pie plate in a spiral evenly over the crust. They should fill the pan to the top
Place remaining ingredients in the food processor and process until smooth and resembles apple sauce. Pour over apples and use a spatula to fill in the spaces between apples.
For a quick and easy method just mix the sliced apples with the cranberry apple mixture and pour into crust.
Cover and let pie rest for 1 hour. You can also place it in the dehydrator for a warm pie.
