One of our favorite restaurants in Atlanta is Lovin It Live, a black owned raw food spot in East Point. This salad recipe is inspired by my favorite salad on their menu. The dressing is like guacamole and makes this a very flavorful salad.
Spinach Salad

Salads don't have to be boring! This one can be as spicy and flavorful as you like.

Serves: 4 Servings
Ingredients
- 1 bag baby spinach
- 1 avocado
- 1 or 2 limes juiced
- ½ to 1 jalapeño or serrano pepper, chopped very fine
- ½ cup chopped red onion
- 2 roma tomatoes, chopped
- 2 cloves garlic, minced
- ½ red bell pepper, chopped
- ½ cup chopped cilantro
- salt to taste
Instructions
- Wash spinach and add to large bowl. Add tomatoes, red onion and red bell pepper to the bowl.
- In a small bowl mash the avocado.
- Add the lime juice, hot peppers, garlic and cilantro.
- Mix well.
- You are basically making a somewhat thin, but not watery guacamole.
- Add more lime juice as needed.
- For more heat add more hot peppers.
- Add salt to taste.
- Add avocado mix to the salad and toss well or use hands to spread the mix over all the spinach.
- Taste again and adjust the seasoning.
