Are you taking a road trip this summer? We are. By planning ahead you can eat healthy vegan or even raw on AND have a great time. Here’s my tips for how to eat vegan on a road trip.
I find I’m much more likely to eat things that I shouldn’t eat if I haven’t made a plan and I am left having to find food while I’m out and about. This is even more true when we are on a road trip.
When you’re having to find food somewhere on the highway and you don’t know what’s around, you’re even more at risk of eating things that you shouldn’t eat. This is a time when Nana Kwaku are subject to succumb to the french fry craving.
Here’s what I will do so that we don’t succumb this time. My dehydrator right now has a large batch of Kale chips in it. I did four bunches of kale chips. These are crunchy and fun to munch along the way. I also have some apples in there dehydrating. I had an abundance of apples anyway so this is a good use of the apples. I will use them along with some other dried fruits and nuts to make trail mix, another good snacking thing for in the car.
I will pack a lot of fresh fruit, things that travel well such as plums and grapes and cherries that we can put in containers or plastic bags. Then we have a something refreshing to eat at a rest stop along the way for lunch. Carrot sticks and marinated vegetables, guacamole and salsa, are other items that are easy to prepare ahead of time that can you survive well in the cooler and be eaten a picnic table at a rest stop along the way.
I have also looked online on google to identify vegetarian friendly restaurants along the way so that we will know that up ahead 10 miles there’s vegetarian restaurant we’re looking forward to trying. That way we are more likely to pass by that Five Guys in their french fries that is at the next exit.
Here is how I did that.
I will use my Yelp! and Happy Cow apps on my phone while we are on the road to find other spots along the way. When we were driving from Miami to Key West we discovered some real gems just by searching “vegan (or vegetarian) restaurant” near us. We discovered juice bars, health food stores, little cafes, vegetarian friendly places, and even raw food restaurants almost every where we went.
Start your day with freshly made juice or smoothie in a to go cup that will get you the good ways down the road. And be sure to pack plenty of water.
