Raw Vegan ABLT Sandwich

This avocado, bacon, lettuce and tomato sandwich is a fabulous recipe for those busy days when you need a quick dinner. If you take time ahead of time to prepare the components and put them in your fridge you can put together a meal with this sandwich and a salad in 15 minutes.

The components you need to have on hand are a raw onion bread or kamut bread, eggplant bacon, and maybe some raw cashew mayo. Make these things ahead on the weekend and you’ll be ready to whip up a dinner or lunch in no time.

  1. Spread mayo and mustard on bread
  2. Layer remaining ingredients
  3. Top with another slice of bread
