Raw Vegan Cashew Mayo

Even if you are not trying to eat all raw this tasty raw vegan cashew Mayo recipe is so delicious you will want to make it. Use it on sandwiches, wraps, burgers or as a creamy dressing. It makes up in a jiffy! In the image above I used it to top the yummy Cocophoria sandwich.

This recipe is adapted (mostly to reduce the quantity) from The Rawvolution Continues by Matt and Janabai Amsden. You can see my review of the book here.

Raw Vegan Cashew MayoIngredients:

  • 1 cup raw cashews
  • 3/4 cup water or coconut water
  • 1/3 cup lemon juice
  • 1/4 cup stone ground mustard
  • 2 cloves garlic
  • 1 tsp salt

Combine all ingredients in a high speed blender and blend until very smooth. Keep in the refrigerator for up to a week.

For a spicy Chipotle Mayo add 1/2 tsp chipotle pepper powder to the above ingredients.
