Chia Porridge

If you are used to having a hot cereal, here is a recipe for you. This is a raw alternative to oatmeal.

Chia seeds absorb liquid and become gelatinous when soaked. They have a consistency similar to tapioca. This version makes a warm porridge.

Ingredients:

  • 1/2 cup chia seeds
  • 1 cup hot water
  • 1/2 cup nut or seed milk
  • 1/2 banana
  • 1/2 cup berries or mixed cut up fruit
  • 1/4 cup pumpkin seeds (optional)
  • 1 tsp cinnamon
  • 1-2 TBL coconut nectar or sweeten

Place chia seeds in a medium-sized bowl. Pour hot water into bowl. (For a raw version use hot but not boiling water.) Set aside. Stir every 5 minutes or so for 15-20 minutes.

Meanwhile, slice bananas and cut up the fruit into bite-sized pieces.

Divide fruit and nuts between two cereal sized bowls. Stir to mix.

Mix cinnamon and sweetener into the soaked chia seeds.

Add chia porridge to the fruit in the cereal bowls. Stir to mix.

Top each with 1/2 of the nut or seed milk and serve.
