Beans are common in a vegan or vegetarian kitchen. They are also common in many different regions of the world. Indian curry dishes are great because they are highly flavorful and can be made spicy if you prefer some heat to your meals.
There are many curry blends available on the market but it is not hard to make your own. A well stocked spice rack is a cooks best friend!
Ingredients:
- 2 TBL olive oil or coconut oil
- 3 cups cooked garbanzo beans (also known as chickpeas)
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp tumeric
- 1/8 tsp asafetida
- 1/4 tsp ground cloves
- 1/2 tsp cinnamon
- 2 bay leaves
- 1/2 tsp ground cardamom
- 1 onion chopped
- 3 tomatoes chopped
- 1 small eggplant chopped
- 2 cups chopped spinach or kale
- 1 tsp salt
Heat oil in a deep frying pan. Add spices and stir until they become aromatic.
Add onions and cook until soft. Add tomatoes, eggplant and garbanzo beans, stir to mix well.
Add the spinach and salt and stir. Cover and cook over low heat for 20 minutes.
Serve with rice.
