Whenever one of us or one of Dr. Opare’s patients has cold or flu like symptoms he recommends this Magic Healing soup recipe that he learned in the 1980s in San Fransisco from Dr. Andrew Tseng, his mentor during his training in Traditional Chinese Medicine and acupuncture. Fortunately it’s also delicious! It’s a regular on our breakfast table, even if nobody is feeling under the weather.
Eating this soup will warm you right up and help clear your sinuses. It will probably make you sweat. This is a good thing! Although “conventional” medicine focus on suppressing the symptoms you are having, these are the healing methods your body uses to right itself. This soup will help in that process. It should be taken immediately upon your first symptoms, and then thereafter as long as needed. (Or anytime really!)
If you are eating all raw, you can heat the water, ginger, garlic, miso and seasoning until hot but not boiling and then add the veggies to your bowl and top with the warm broth.
- 1 inch piece of ginger
- 3 garlic cloves
- 3-4 scallions with root end
- 1 tsp miso paste
- 2 tsp ground withe pepper
- ½ tsp toasted sesame oil
- 1 tsp rice vinegar
- 2 TBL soy sauce
- 2 tsp dulse flakes or other seaweed
- 3-4 cups water
- 1 cup cooked rice OR 6-8 oz uncooked rice noodles
- 2-3 cups chopped veggies of your choice (for example: mushrooms, snow peas, green beans, carrots, bok choy, broccoli, kale, bell pepper, zucchini)
- Add water to pot
- Chop garlic, ginger and scallions and add to pot
- Bring to a slow boil
- Add the miso paste, pepper, sesame oil, vinegar, sea weed and soy sauce
- Add the rice or noodles.
- When they are almost done add the veggies (you can add harder veggies earlier if they need more cook time)
- Simmer until veggies are tender crips
- Serve immediately
