This 50 Shades of Vegan Kale Challenge recipe comes from my good friend Safi Toure. It is a colorful dish that offers several optional additions to customize to your tastes and what is in your pantry. I have noted what I used in this version shown here.
- 1 bunch of kale chopped
- 1/2 red onion chopped
- 2-3 garlic minced
- 1 medium lemon juiced
- 1 avocado (chuncked)
- 1-2 tbls agave or your favorite sweetener. (I used mirin.)
- 1-2 tbls liquid smoke (adds a smoky flavor, but I avoid this)
- 4 tbls olive oil
- 4 tbls nama shouya
- 3 tbls apple cider vinegar
- 1 tsp smoked paprika
- 1 tsp dulse flakes
- ½ tsp white pepper
- ½ bell pepper chopped (I used yellow pepper)
- 1 cup of bean sprouts (or sprouts your choice) (I used clover sprouts)
- 1 sweet apple sliced (optional)
- 1 ripe plantain sliced (optional)
- 1 jalapeno diced (optional)
Toss all ingredients in a very large bowl. You can let it marinate for 30 minutes or more or eat it right away.
