Spicy Kale with Bean Sprouts

ToureKaleThis 50 Shades of Vegan Kale Challenge recipe comes from my good friend Safi Toure. It is a colorful dish that offers several optional additions to customize to your tastes and what is in your pantry. I have noted what I used in this version shown here. 

  • 1 bunch of kale chopped
  • 1/2 red onion chopped
  • 2-3 garlic minced
  • 1 medium lemon juiced
  • 1 avocado (chuncked)
  • 1-2 tbls agave or your favorite sweetener. (I used mirin.) 
  • 1-2 tbls liquid smoke (adds a smoky flavor, but I avoid this)
  • 4 tbls olive oil
  • 4 tbls nama shouya
  • 3 tbls  apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp dulse flakes
  • ½ tsp white pepper
  • ½ bell pepper chopped (I used yellow pepper)
  • 1 cup of bean sprouts (or sprouts your choice) (I used clover sprouts)
  • 1 sweet apple sliced (optional)
  • 1 ripe plantain sliced (optional)
  • 1 jalapeno diced (optional)

Toss all ingredients in a very large bowl. You can let it marinate for 30 minutes or more or eat it right away.
