Colorful, Flavorful, and Satisfying

I have in the past resisted using lettuce as a wrap or taco shell. Somehow it just didn’t seem like it would be satisfying. I have made some tasty dehydrated wraps and shell however sometime I want something NOW! Recently I tried using romaine leaves as taco shells and I loved it! Everyone raved about them. They were beautiful and delicious. These will be a regular in my menu rotation. Here is the recipe:

Tacos

  •  2-3 romaine leaves per person
  • 2-3 roma tomatoes chopped
  • Taco “Meat”
  • Guacamole
  • Mango Salsa
  • Cashew sour cream (optional)

Taco “Meat”

  • 1 1/2 cups pecans soaked for 2-4 hours then drained
  • 1/2 cup sun-dried tomatoes soaked for 1 hour then drained
  • 1/2 white onion rough chopped
  • 2 cloves garlic
  • juice of 1 lime
  • 1/4 cup chili powder
  • 1/2 tsp salt

Place ingredients in food processor and process until well mixed. Taste and adjust seasoning.

Guacamole 

  • 3 ripe avocados
  • 1 jalapeno pepper
  • juice of 1 lime
  • 1/2 bunch cilantro chopped
  • 1/2 red onion chopped
  • 1/2 tsp salt

Place ingredients in food processor and process until mixed but still chunky. Taste and adjust seasoning.

Mango Salsa

  • 1 large mango peeled and cut into cubes
  • 1/2 jalapeno pepper diced
  • 1/2 red onion diced
  • 1/4 bunch cilantro chopped
  • juice of 1/2 lime

Mix ingredients together in a bowl

Assembly

Place romaine leaves on platter. On each leaf layer taco meat, guacamole and salsa. Top with chopped tomatoes. You can also top with a raw cashew sour cream.
