One of the things I love about marinated vegetables is the endless variations that are possible. It is a wonderful way to include raw veggies in your meal no matter what your theme is.
This variety uses the amazing flavors used in Thai cooking. I used Thai green chilis which are pretty spicy. Feel free to use a milder chili if desired. I served this over cooked soba noodles for a partially raw meal. The flavors were as lively as the colors of the dish. Use as a main dish or a side dish.
- 2 cups broccoli florets
- ½ red bell pepper cut into strips
- 3 scallions sliced
- 1 garlic clove minced
- 1 Thai green chili
- ½ cup Thai basil (or regular basil if you can't get the Thai basil)
- 1 kaffir lime leaf
- 2-3 TBL cold pressed sesame oil
- 2 TBL Organic Shoyu or soy sauce
- 1-2 TBL mirin
- ¼ cup lime juice
- Place broccoli and peppers in a large bowl
- Add scallions and garlic
- Chop chili very fine and add to veggies
- Bunch the basil leaves together and cut into very thin strips
- Remove the stem from the kaffir lime leaf
- Stack the halves of the kaffir lime and slice int very thin strips
- Add basil and kaffir lime to veggies
- Add remaining ingredients
- Toss to distribute flavors
- Let sit for 15 minutes or longer
- Serve over rice or soba noodles or just on its own
