I just got a new cookbook and I’m excited. It’s by Richa Hingle, one of my favorite cookbook authors. Her first book, Vegan Richa’s Indian Kitchen is the book I use most (besides my own). I love Indian food and her book has taught me a lot about Indian cooking and about taking curries beyond store bought curry powder.
In her beautiful new book Vegan Richa’s Everyday Kitchen she brings her love of flavor to dishes from other regions of the world. She has arranged the book in an interesting fashion. She starts each section with one or more of her 36 “amazing sauces” which she then applies to a variety of recipes along with suggestions for even further variations.
Her sauces include Green Curry Paste, Date-sweetened Teriyaki Sauce, Smoky Cheese Sauce, Ranch Dressing, just to name a few. My first dip into the cook book was to make Lakasa Curry Paste which I use to make Lakasa curry soup. The result was delicious!
Because Richa believes in creating your spice blends from scratch the list of ingredients can be long. Don’t let this scare you away. It’s worth the few extra minutes it takes to measure and mix the spices yourself. And your spice collection will be enriched. What you learn from her recipes will help you develop a good understanding of spices. This will make it easier for you to improvise and create your own recipes.
I’m looking forward to trying my hand at the lentil-walnut burgers (can’t find veggie burgers here), Manchurian Chickpeas and Broccoli just to name a few. Here are a few of the many recipes and the beautiful photos that are included.
