Carrot Apple Raisin Salad

Looking for an alternative to tossed salad? Add this quick and easy vegan carrot apple raisin salad recipe to your menu planning. It’s perfect during the winter months when your access to other vegetables in their flavorful prime may be limited.

I had some beautiful fresh dill in my herb garden and it along with a tart lemon tahini dressing complimented the sweet apples, carrots and raisins wonderfully. On this day I paired it with some couscous tabouli (the parsley was bountiful in the garden too) and a tossed salad. The result was a satisfying mostly raw meal.

Start by grating the apples and carrots then adding them along with the raisins to a bowl. Make a simple oil-free dressing with the tahini and lemon juice. Mix and you’re done!

Ingredients
  • 2-3 carrots
  • 1-2 apples
  • ½ cup raisins
  • ¼ cup chopped fresh dill
  • ¼ cup tahini
  • ⅛-¼ cup fresh squeezed lemon juice
  • ½ TBL soy sauce or ½ tsp salt (optional)
Instructions
  1. Grate the carrots and apples
  2. Combine in a medium bowl
  3. Add raisins and dill and mix
  4. Combine tahini, lemon juice and soy sauce/salt in a small bowl and mix well
  5. Pour over salad and stir to coat
