Marinated Veggies Recipe

I learned this marinated veggies recipe when I was a teen. My mom made marinated broccoli many times. She used to bring it to potlucks where everyone would rave about it. I’ve taken it to many potlucks too. People still love it!

Once I started eating vegan and raw vegan I began making it again. I discovered I could make many, many variations by using different veggies paired with different spices, herbs, vinegars, etc to make amazing side dishes for whatever I was serving that day. Use different veggies and different vinaigrette ingredients to match this to ANY menu

Serves: 4 servings
Ingredients
  • 2 cups chopped firm veggies. Use all one type or a variety
  • 2-4 garlic cloves
  • 1-2 TBL olive oil or tahini
  • 1 TBL soy sauce, tamari, or coconut aminos
  • 1 TBL vinegar of your choice or citrus juice
  • 1 tsp mirin
  • ½ tsp toasted sesame oil
  • chili flakes or powder to taste
  • 1 tsp Italian seasoning
Instructions
  1. Cut veggies into bite sized pieces
  2. Mince garlic
  3. Add the above to a bowl, or zipper bag
  4. Mix the remaining ingredients to make a vinaigrette dressing
  5. Pour dressing over the veggies.
  6. Mix well
  7. Place in fridge for 30 minutes or longer.
  8. Stir from time to time. (of flip over the zipper bag)
  9. Serve!
